A delicious cole slaw with a zesty lime flavor. I made cole slaw once when all I had were limes. We liked it so much we tweaked it up, and make it all the time.
- 1 small head cabbage, shredded
- 2 limes
- 1/2t salt
- 3/4t sugar
- 3-4T mayo
- pepper to taste
All of the ingredients are “to taste”, especially since the size of the cabbage is a variable. Add all the ingredients and toss. Taste and correct. It always needs more pepper than you think it does. This keeps well for a day or so, but it also tastes good right away.
